Ingredients needed are:
- 3/4 pound boneless, skinless chicken breasts
Marinade:
- 2 tablespoons soy sauce
- 1 tablespoon rice wine or dry sherry
- a few drops sesame oil
- 1 tablespoon cornstarch
- 1 cup fresh button mushrooms
- 1/2 cup canned bamboo shoots
- 1/2 cup canned water chestnuts
- 2 slices ginger
- 1 garlic clove
- 1/2 cup chicken stock
- 2 tablespoons oyster sauce
- 1 teaspoon sugar
- 1 tablespoon cornstarch
- 3 tablespoons oil for stir frying, or as needed
- Chop your chicken breasts into thin strips. Blend in your marinade, adding your cornstarch last and marinate your chicken for about 15 minutes.
- Prepare your vegetables by chopping them into thin slices. Rinse all of them thoroughly and peel and mince your garlic.
- Mix your chicken stock, oyster sauce, sugar, and cornstarch together and blend well. This will be your Moo Goo Gai Pan sauce.
- Heat your wok and add about two tablespoons of your frying oil. Add your chicken and stir-fry until it is cooked thoroughly. Remove and set aside. Add your last tablespoon of oil as well as your ginger and garlic and mix well.
- Add your mushrooms and cook for a few seconds, then add your bamboo shoots and your water chestnuts. Stir-fry for a very short time; you want these vegetables to still have some crunch.
- Add your sauce to the middle of your pan, and cook until it has thickened.
- Return your chicken to your wok and mix all your ingredients well, coating them with your Moo Goo Gai Pan sauce evenly.
